I’m not usually one for posting pics of my meals online, but oh.my.god. THIS one was just begging to be shared! I improvised a meal out of what I had left in my kitchen and inadvertently concocted a gourmet meal. In a saucepan, I splashed some oil, heated that up and added about a cup of frozen broccoli florets and spinach. Into that a generous heap of oregano – you can never have too much oregano in my book – basil, garlic and a can of diced tomatoes. I cooked up some angel hair pasta, threw it all together, with a little parmesan cheese on top and OH.MY.GOD. I took the first bite and swooned. Incredibly delicious. Simple, savory, all the flavors working in harmony.
I vow to never again use jarred marinara sauce. My Italian ancestors are right now rising from their graves and applauding. Mille grazie!
